Two gas-filled chargers are commonly used in food preparation.  One is the soda chargers.  These are gas cylinders filled with pure carbon dioxide and used with the soda siphon for the preparation of carbonated water.  Cream chargers on the other hand contain pure nitrous oxide gas.  This is the right kind of charger to help you produce voluminous whipped cream without difficulty and works with the cream whipper or whipped cream dispenser.  When you are using both kinds of chargers, make sure you store them separately and label them as well.  This will help you not interchange one for the other and avoid disastrous results.  Make sure though that you get HACCP-certified chargers whether you intend them for the preparation of soda water or fresh whipped cream.
